Zoodles and Dogs

I must admit. I love hot dogs. Memories around them make them even more special. They were a treat for me and always will be. When I began to clean up my eating habits several years ago, hot dogs were one of the items that landed on the “No more” list.

When I was at The Pioneer Coop in Iowa City, Iowa looking around the meat counter, low and behold, there were clean hot dogs! Ground pork or beef, homemade, low in sodium, no added sugars, and nitrite free. Well, seasoned ground meat in hot dog style natural casings.

How excited was I??? Let’s say I was a proud owner of a dozen.

I was sorting out some recipes from over the summer that I didn’t get around to posting. This recipe is so simple, so reminder of summer, and so easy to double and triple.



  • 1-2 whole zucchini zoodled
  • 2 hot dogs sliced into about 1/2 inch pieces. Nitrite/nitrate free, all naturally made, pork or beef. If you cannot find these then use mild sausage
  • 1/2 whole yellow onion sliced thin
  • 1 tsp red pepper flakes adjust to taste
  • 2 cloves garlic
  • 2 tsp Sir Kensington's Spicy Brown Mustard
  • 2 tsp coconut aminos
  • 1/4 cup cliantro fresh chopped
  • 1 tbs extra virgin olive oil, coconut oil, gheeor butter I like to use Kerrygold butter


  1. Zoodle the zucchini using a spiralizer. Lay out on a bed of paper towels or kitchen towel. Sprinkle with salt and let sweat about 15 minutes. Do this step first. While sweating gather the rest of the ingredients and prep the vegetables.

  2. Once the zoodles have sweated and you have wring them out in the paper/kitchen towel.

  3. In a medium skillet of melted butter/ghee/oil over medium heat add in onion and hot dog. Saute until softenend.

  4. Add in zoodles and garlic. Continue to saute for about a minute then add in rest of the ingredients, except cilantro.

  5. Once everything is heated. Take off heat, once plated, and top with sprinkle of cilantro.

Recipe Notes

***One of the best things about this recipe is that you cannot mess it up. This can easily be doubled or even tripled to feed the whole crew.

***This doesn't hold well for several days. But it does work very well it you use it for left overs the next day.
