Sweet Potato Brunch Casserole

I love how simple and complex this recipe is.

Bacon, onion, sweet potatoes are my trifecta, go-to breakfast food. Finding ways to freshen up the combination is always a challenge. Primal Palate makes this breakfast blend that is sooooo good. Cinnamon and slightly herbal flavor compliments this casserole well. Honestly, you really don’t even need much for measuring of ingredients.

This is a recipe that you can throw together quickly and take to a brunch. Go ahead and get your brunch-on!

This is the perfect brunch or meal prep breakfast casserole. You can make up several of these ahead of time, cook and freeze. Have a brunch gathering? Simply pull out of freezer, thaw and reheat.

After I initially cook the casserole, I cut it up into servings and reheat in a skillet for breakfast.

  • 0.5 teaspoon butter, ghee, avocado, or olive oil
  • 5-6 pieces bacon
  • 2-3 sweet potatoes shredded
  • 1 whole yellow onion diced
  • 8-12 whole eggs or egg white equivalent
  • 1-2 teaspoons Primal Palate Breakfast Blend


  1. Cook bacon in a large skillet. Once bacon is done, let cook and crumble. Set aside

  2. In the skillet with bacon grease add shredded sweet potato and onion. Saute over medium heat until softened.

  3. Combine the seasoning blend with eggs and medium mixing bowl.

  4. Grease a baking dish/ghee with the butter or oil.

  5. Put the sweet potato and onion mix in the baking dish and smooth out evenly.

  6. Pour egg mix over and sprinkle bacon on it.

  7. Bake at 350 F for 25-30 minutes.
