Salmon with Cauliflower Rice
And then there are days where you just eat out of the skillet. We have all had those days and lately I feel like my days are more in favor of this quick skillet than a complicated meal.
This is as clean and healthy as it gets. Oh and quick, effortless, and simple. Less than 20 minutes.

- Half Bag Frozen Cauliflower Rice
- 2 tablespoons Butter
- 6 ounce Salmon
- 1 tablespoon Trader Joe’s Lemon Pepper
I cooked half a bag of frozen cauliflower rice and 2 tablespoons of butter in a small skillet over medium heat.
When rice begin to sizzle and heated through. I placed 4-6 oz salmon piece, that I had previously cooked, place in the center or the cauliflower rice skin side up.
Cover. Reduce heat down to medium-low for about 5 minutes or until salmon is heated through.
Take skillet off heat, flip the salmon skin side down. Using a generous amount of Trader Joe’s lemon pepper in the grinder bottle or your favorite seasoning. Season as desired and enjoy!
