Refreshing Spring Salad

I love the sweetness in honey, the almost sour bite of the red wine vinegar, the mellowing of the light tasting olive oil, with a dash of salt that compliments each other on this salad and others. Making your own salad dressing can be easy as drizzling the ingredients over the top of the salad and tossing together. Serve with a side of salmon, fish of any kind or chicken. So So Good!

This kind of dressing is time saving since there is no strict measurements and having to wash measuring spoons...bonus!

  • 1 head butter leaf lettuce, romaine, favorite lettuce
  • 1 cup radishes, diced
  • 0.5 white or yellow onion, diced
  • 0.25 cup parmesan cheese-shredded or shaved
  • 1 whole Hungarian yellow pepper diced or sliced
  • 0.5 tomato, diced
  • 0.5 teaspoon Honey
  • 0.5 teaspoon red wine vinegar
  • 0.5 teaspoon light tasting olive oil
  • sea or kosher salt, as desired


  1. Lettuce on bottom and build up from there with ingredients in a medium to large bowl.

  2. As far as measuring the honey, red wine vinegar, and light tasting olive oil. I start with a lower amount about ½ teaspoon and drizzle it over the salad. Toss it together. Try a bite. You can always add a little more. This is your dressing.

Recipe Notes

You can mix it up separately or you can drizzle it over the salad and vegetables toss and serve. If you make this salad up the night before do not put the dressing on it.
Adjust the measurements of the dressing to your preferences. We all have different tastes or some days you may want a more mellow dressing or you may want a tangier one. You can adjust it as you want. As with all my recipes you can cook them as they are or you can adjust ingredients to your liking.
