Lunch Time Turkey Wraps

  • 8 Slices esquite smoked turkey I like Oscar-Meyer Natural. However, any kind of sliced turkey will work
  • 1 Handful spinach leaves
  • 12 Slices yellow, green, or red peppers sliced thin
  • 1-2 sprigs fresh dill chopped
  • 2 Leaves chives or garlic chive chopped
  • 1/4 Cup cashew cream
  • 2 Tablespoons coconut cream
  • 1 teaspoon lemon pepper


  1. For the spread, mix together in a small bowl: fresh dill torn in to pieces, garlic chive or regular fresh chive, cashew cream, coconut cream, and lemon pepper

  2. Layer 2 slices of turkey on top of each other

  3. Layer of spinach leaves. As much or as little as you like

  4. Put 3 slices of pepper on one half of the wrap and on the other half put a generous dollop of the spread mix.

  5. Fold in half to eat. Makes 4
