Green Beans and Tomatoes

Green beans in the summer are in abundance. The same traditional recipes over and over get tiring. This is going to be one of many recipes to break out of the rut of what to do with all these green beans.

  • 1 pound green beans
  • 1 cup yellow cherry or grape tomatoes halved
  • 1 teaspoon olive oil
  • 1 teaspoon butter or ghee I prefer Kerrygold or Tinstar, respectively
  • 1 teaspoon beau monte seasoning
  • 1 teaspoon lemon pepper seasoning


  1. Over medium heat in a skillet add olive oil or coconut oil with ghee or butter, let melt until it starts to sizzle and boil. Add green beans tossing them until they are well coated with melted mixture. Cover for about 5 minutes. Uncover green beans, tossing occasionally until tender and start to shrivel.

  2. Once green beans are desired tenderness add tomatoes and heat through.

  3. Sprinkle with Beau Monte and lemon pepper, take off heat, and let sit about a minute prior to serving.
