Best Ever Peanut Butter Balls
Who doesn't love peanut butter or any nut butter balls?!?!?!?! Especially ones that taste like monster cookies.
This recipe makes about 30-34 balls depending on the size of the cookie scoop used.
Interesting note on making peanut butter balls. Not all peanut butter is the same. I use natural peanut butter with minimal ingredients. This kind of peanut butter does not set up or hold well at room temperature. Store them in the refrigerator or in the freezer for a special treat. Although I have been know to put this recipe in a container and eat a spoonful of it at a time.
I typically am not person to be put candy pieces in a recipe but for fundraisers, special events, and other occasions where you want to bring a treat with a healthy twist- this recipe can provide that.

- 1 pound peanut butter
- 1 cup quick cook oats
- 2 teaspoons vanilla extract
- 0.5 cup mini chocolate chips, dried fruit, candy pieces- optional.
- 1 tablespoon Flax seed
- 0.5 cup honey
Warm honey until very runny. Then add everything into a large mixing bowl. Combine well. Let sit for 20 minutes. This will allow for the flax and oats to absorb the fluids in the peanut butter and the honey making it easier to stick together.

Use a small size cookie scoop to make uniform balls. Place on a butter/ghee greased cookie sheet or on parchment paper and allow to freeze or chill. Once set up put in storage container.
